Caramel Apple Crisp Cheesecake

My son Joel’s all-time favorite dessert that I make! The base is that of our creamy NY-style cheesecake and sits atop a traditional graham cracker crust. Topped with caramelized honeycrisp apples and out perfectly golden oat and butter-based topping. Finished off with house-made caramel drizzle.
